Method
- 1
Mix the flour, yeast, sugar and salt in a large bowl. Add the water and oil and knead for 10 minutes into a smooth, slightly sticky dough (6 minutes in a stand mixer).
- 2
Cover and leave to rise in a warm place for about 1 hour, until the dough has doubled in size. On the Costa in summer, this often takes just 45 minutes.
- 3
Press the dough flat and fold it into a tight ball. Put the ball on a piece of baking paper, brush with water and sprinkle with the seeds (optional). Cut a cross in the top.
- 4
Lift the ball into the slow cooker by the baking paper. Stretch a clean tea towel tightly over the pot, fold the corners up onto the lid (away from the hot outer wall) and put the lid on. Bake for 2–2½ hours on HIGH.
- 5
The bread is ready when the base is golden brown and sounds hollow when tapped (core temperature approx. 95 °C). Want a brown top? 3–5 minutes under the grill or in the air fryer at 200 °C. Leave to cool on a wire rack.
