Method
- 1
Put the onions in the slow cooker; the pot can be completely full, as they shrink enormously. Scatter over the butter, oil, salt, sugar and thyme (optional) and toss everything together.
- 2
Put the lid on and cook for 10–12 hours on LOW. Toss once halfway through if you're around.
- 3
Are the onions soft but is there still a lot of liquid in the pot? Then wedge a wooden spoon between the pot and the lid and cook for another 1–2 hours on HIGH, until the liquid has evaporated and the onions are deep golden and jammy. Stir now and then.
- 4
Optional: Stir in the sherry vinegar for a fresh, sweet-and-sour finish.
- 5
Leave the onions to cool and spoon them into clean jars. Keeps for 1 week in the fridge. Freeze the rest in portions in an ice cube tray.
